veg baked cutlet


It has been really a long time since i posted anything.
so here comes a recipe wchich i recently tried.

we need:
vegetables finely chopped:
Potatoes(medium) - 1 nos
capsicum- 1/2
Green peas - 1/4 cup
Carrot - 1 no
cauliflower- 1/4 no (optional)
broccoli- 1/4 optional
Coriander leaves - 1/2 cup

Paneer- 5-6 cubes (mashed)
Dry mango powder(Amchoor) - 1/2 tsp
Ghee/oil - 1 tbsp
Red chilly powder - As per taste
coriander powder-1/4 spoon
garam masala-1/4 spoon
Salt - as per taste

6 slices of whole meal bread.
chat masala- 1spoon
yogurt- to soak the bread.

semolina- as per requirement.

method:
1)grind all the chopped vegetables and paneer coarsely.
2)Add all the other ingredients and mix well.
3) scramble the bread and soak in yogurt mixed with chaat masala and little salt.use just enough yogurt so that its not watery.
while adding salt keep in mind that we have added salt with the vegges.Mash the bread well.
4)pre heat the oven.
5)mix the vegges and the bread together.
6).Shape as desired into small sized cutlets.
7)roll them over the semolina.
8)Place in greased aluminum foiled tray and bake for 20 min in medium (200), till brown.

:- It may take 20 - 30 mins.

:- Serve hot with mango chutney/ ketchup/pickle.to make mango chutney:
we need:
1 raw mango
cumin seed-1/2 spoon
asafoetida-1 pinch
salt -to taste.

method:
grind well all of them with little water and the chutney is ready.
